COFFEE CAKE THAT MELTS IN YOUR MOUTH

Hello Friends and Family,



Everyone likes a good recipe every now and then. Here's one I received as a new bride ...mmmmany years ago..... My good friend Karen liked it so much she named it in her honor because I know she loves to cook!!! Seriously, Karen, where did you get the recipe?... Karen's coffee Cake. Here is her blog --you might like to check it out. I am inspired by people who love to cook. Me? I would rather be out on the lawn mower being in deep thought. But, when I come in, the cooking routine stares me in the face and something must be done. So... after looking for a recipe for Jed last night, I decided to clean out my recipe box. I saw the card, 'Karen's Coffee Cake' and remembered how good it was, so I made it. Turned out pretty good!



Here is the recipe in case you get hungry: Correct Karen??

Karen's (Liz's friend) Coffee Cake

Mix Together
3 1/2 cups flour
1 cup br. sugar
1 cup white sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt

Then add 7/8 cups oil. Mix together until crumbly. Reserve 2 cups for top of cake.
To the remainder add:
1 egg
1 tsp. baking soda
1 cup buttermilk or sour milk (2 tsp. vinegar and 1 cup milk)

Beat well. Pour into well greased 13 x 9 pan. Sprinkle crumbs on top. Bake at 350*, 40-45 minutes. Test with wooden pick in the center. Eat! and enjoy with a glass of cold milk!!!
